Sweetcorn fritters 

makes 6 fritters


  1. In a large bowl combine all of the ingredients for the fritters (bar the oil) 

  2. Heat a large frying pan to a medium heat and add 2 tbsp of vegetable oil.

  3. Make each fritter the size of 1 heaped tbsp

  4. When the oil is hot add 3 fritters to the pan at a time. Flatten them slightly. Fry for 4-5 minutes. The underneath of the fritter should be firm enough to to flip over to cook the other side. Fry on the other side for a further 2-3 minutes. Both sides should be nice and crispy! Repeat until you have used up all of the fritter mixture. 

Serving suggestions 

Suggestion 1: Wild rice, black beans, sliced avocado and tomato salsa

Suggestion 2: Inside a seeded burger bun with guacamole and fried red onions

Suggestion 3: Roasted sweet potato fries, fresh rocket, baked vine tomatoes and tomato ketchup 

  • 1/2 diced white onion 

  • 1 cup sweetcorn

  • Handful of chopped coriander

  • 2 chopped spring onions

  • 1/2 cup soya cream 

  • 1 tsp sweet smoked paprika

  • 1/2 tsp baking powder

  • 3/4 cup plain flour 

  • Salt and pepper (to taste)

  • Golden rapeseed oil (for frying)
