Ice cream cheesecake with a strawberry compote
Method
Ingredients (12 portions)

750mls vegan vanilla ice cream
(I used Swedish Glace) -
20 strawberries (diced in half)

6 tbsp golden caster sugar

10 medjool dates (de-stoned)

1/2 cup almonds
-
1/2 tsp ground cinnamon

4 heaped tbsp soft vegan butter

120g biscuits (I used. Nairn's coconut and chia seed oat cakes)

Jackfruit and black bean burger patties
Jackfruit is so versatile and I am forever coming up with new ways to use it. It is perfect combined with black beans into a burger pattie!
The spices used in this mixture are slightly Caribbean themed and some chilli can be added if you fancy a kick! These can be enjoyed as naked burgers or with a bun!

There are many different companies that stock jackfruit. I find the essential organic jackfruit to be the best (out of the ones that I have tried so far). The flavour is subtle and mild which allows you to put the flavour that you want into it!
Method
Ingredients (makes 4 patties)

1 tin of jackfruit (~224g)

230g drained black beans

1 diced white onion

2 minced garlic cloves

1 diced small knob of ginger

1/2 tsp ground cinnamon

1/2 tsp all spice

1 tsp smoked paprika
-
1 tbsp tomato puree
-
2 tbsp plain flour
-
Juice of 1/2 lime
-
Salt and pepper to taste
Burger Patties

Heat a large frying pan and add a good dash of olive oil. When the oil is hot sweat the onion, ginger and garlic for 5-10 minutes or until the onion is soft.

With your hands shred the jackfruit pieces directly into the pan.

Next add all of the dry spices, tomato puree, black beans, lime, salt and pepper.

Fry the mixture in the pan for 5-10 minutes. Combine the ingredients so that the jackfruit becomes covered with all of the spices.

Remove the mixture from the pan and let cool. Mash the mixture with a masher so that the black beans start to break down (don't purify the mixture - allow it to have a little texture!)

Add the plain flour and shape using your hands into patties. Lightly dust both sides of the patties with some extra flour.

When ready to fry heat a large frying pan and add a good amount of olive oil. When hot add the patties. Fry on a medium heat so that the patties are crispy on both sides.

Transfer the patties into toasted burger buns or enjoy naked!
