Ice cream cheesecake with a strawberry compote
Method
Ingredients (12 portions)

750mls vegan vanilla ice cream
(I used Swedish Glace) -
20 strawberries (diced in half)

6 tbsp golden caster sugar

10 medjool dates (de-stoned)

1/2 cup almonds
-
1/2 tsp ground cinnamon

4 heaped tbsp soft vegan butter

120g biscuits (I used. Nairn's coconut and chia seed oat cakes)

Pinch of salt

So Creamy White Bean Dip
Ingredients (serves 2-4)
Method

1 tin white kidney beans (240g drained)

1 garlic clove
-
Juice of half a lemon
-
1 tbsp soya cream
-
2 tbsp olive oil
-
Grind of salt and pepper

Pinch of sumac (optional)
-
Drizzle of chilli oil (optional)

Blend kidney beans, garlic clove, lemon juice, soya cream, olive oil, salt and pepper in a food processor until smooth.

Spread the dip onto a flat plate. Add sumac and chilli oil on top (optional)

Enjoy with pitta, flatbreads or with a salad
