Ice cream cheesecake with a strawberry compote
Method
Ingredients (12 portions)

750mls vegan vanilla ice cream
(I used Swedish Glace) -
20 strawberries (diced in half)

6 tbsp golden caster sugar

10 medjool dates (de-stoned)

1/2 cup almonds
-
1/2 tsp ground cinnamon

4 heaped tbsp soft vegan butter

120g biscuits (I used. Nairn's coconut and chia seed oat cakes)

Pinch of salt

Nori Panko Breaded Banana Blossom
Ingredients (serves 4)
Method

Drain and carefully wash the pieces of banana blossom. Pat dry using some kitchen paper

Crumble the nori seeds into small pieces.

Arrange 3 bowls to coat the banana blossom. 1 bowl of breadcrumbs, salt and nori, 1 bowl of 1.5 cups plain flour and 1 bowl with 1.5 cups plain flour, turmeric and 1.5 cups water - mixed well.

Dip the banana blossom into the bowls in the following order (see below).

Shallow fry the banana blossom in hot vegetable ​oil in a large pan; a couple pieces at a time until crispy on both sides.

Immediately after frying top with lemon juice, salt and malt vinegar! Enjoy!
