Ice cream cheesecake with a strawberry compote
Method
Ingredients (12 portions)

750mls vegan vanilla ice cream
(I used Swedish Glace) -
20 strawberries (diced in half)

6 tbsp golden caster sugar
-
10 medjool dates (de-stoned)

1/2 cup almonds
-
1/2 tsp ground cinnamon
-
4 heaped tbsp soft vegan butter
-
120g biscuits (I used. Nairn's coconut and chia seed oat cakes)

Pinch of salt

Lemon and poppy seed pancakes with sprinkles!
Ingredients
(makes 10-12 pancakes)

2 cups plain white flour

1 tsp bicarbonate of soda
-
1 tsp baking powder
-
1/4 cup brown sugar
-
Pinch of salt
-
Zest of 1 lemon
-
Juice of 1 lemon
-
1 tbsp poppy seeds
-
1 + 3/4 cups soy milk

1 tbsp olive oil
Pancake Batter
For frying
Garnish
Method

Get a large bowl and combine all of your batter ingredients. Whisk well.

Heat a large frying pan and add a little coconut oil. Allow the oil to spread around the pan.

Pour some of the batter in the centre of the frying pan.

Fry the pancakes one at a time. When you start to see air pockets form in the pancakes confidently flip them.. Between pancakes I lightly spray the surface of the pan with fry light and this stops them sticking!

Serve with maple syrup and sprinkles! Maybe some fruit...
Tip 1: The first pancake can be a bit of a dud! Keep at it and the next 11 will be perfection.

Tip 2: Fry light between pancakes is fantastic to stop the pancakes from sticking
​
Tip 3: Make sure that the pancakes don't catch! Burnt lemon is not good...
