Lemon and poppy seed pancakes with sprinkles!

(makes 10-12 pancakes

  • 2 cups plain white flour

  • 1 tsp bicarbonate of soda

  • 1 tsp baking powder

  • 1/4 cup brown sugar 

  • Pinch of salt 

  • Zest of 1 lemon

  • Juice of 1 lemon 

  • 1 tbsp poppy seeds 

  • 1 + 3/4 cups soy milk 

  • 1 tbsp olive oil 

Pancake Batter

For frying



  1. Get a large bowl and combine all of your batter ingredients. Whisk well. 

  2. Heat a large frying pan and add a little coconut oil. Allow the oil to spread around the pan. 

  3. Pour some of the batter in the centre of the frying pan. 

  4. Fry the pancakes one at a time. When you start to see air pockets form in the pancakes confidently flip them.. Between pancakes I lightly spray the surface of the pan with fry light and this stops them sticking! 

  5. Serve with maple syrup and sprinkles! Maybe some fruit...

Tip 1: The first pancake can be a bit of a dud! Keep at it and the next 11 will be perfection. 

Tip 2: Fry light between pancakes is fantastic to stop the pancakes from sticking

Tip 3: Make sure that the pancakes don't catch! Burnt lemon is not good...
