Jerk Tofu and Tropical Guacamole (served with sweet potato, and rice & beans)

Ingredients (Serves 2)

Method

  • 300g extra firm tofu (1 inch slices) 

  • 4 tbsp corn flour

  • 4 garlic cloves 

  • 2x2cm knob ginger 

  • 1/2 tsp nutmeg 

  • 1 tsp cinnamon 

  • 1/2 tsp mixed spice 

  • 4 spring onions 

  • 1 scotch bonnet 

  • 2 tsp brown sugar 

  • 2 tsp boullion powder (GF friendly) 

  • Juice of 1 lime 

  • 1 tbsp olive oil 

  1. Drain and blot the tofu. Slice into 1cm pieces and coat well in corn flour.

  2. In a food processor combine the remaining ingredients for the tofu until smooth. 

  3. Add some vegetable oil (5 tbsp) to a large frying pan. When hot add the slices of tofu and fry on either side until very crispy. Add the jerk sauce and cook out for 5 minutes. 

  4. Combine the ingredients for the guacamole and serve alongside the tofu. Enjoy!

  • 2 smashed avocados 

  • Juice of 1 lime 

  • 1/2 diced mango

  • 1/2 diced papaya 

  • Pinch of salt
