Edamame Bean and Roasted Garlic Toasts 

Ingredients (makes 8 toasts)

  • 2 cups edamame beans 

  • 2 garlic cloves 

  • Handful of fresh basil 

  • Juice of 1 lemon

  • 4 tbsp extra virgin olive oil 

  • Sea salt and cracked black pepper

  • Italian flatbreads 

Method

  1. Preheat your oven up to 200 degrees. 

  2. Roast 2 garlic cloves (skin on) for 15 minutes and set aside to cool. 

  3. To a large blender add your beans, basil, lemon, olive oil and your garlic (skin removed). Pulse well. 

  4. Spread over your flatbreads. Add extra seasoning with salt and pepper if needed.
