Ice cream cheesecake with a strawberry compote
Method
Ingredients (12 portions)

750mls vegan vanilla ice cream
(I used Swedish Glace) -
20 strawberries (diced in half)

6 tbsp golden caster sugar

10 medjool dates (de-stoned)

1/2 cup almonds
-
1/2 tsp ground cinnamon
-
4 heaped tbsp soft vegan butter

120g biscuits (I used. Nairn's coconut and chia seed oat cakes)

Pinch of salt

Edamame Bean and Roasted Garlic Toasts
Ingredients (makes 8 toasts)

2 cups edamame beans
-
2 garlic cloves
-
Handful of fresh basil
-
Juice of 1 lemon
-
4 tbsp extra virgin olive oil
-
Sea salt and cracked black pepper

Italian flatbreads
Method

Preheat your oven up to 200 degrees.

Roast 2 garlic cloves (skin on) for 15 minutes and set aside to cool.

To a large blender add your beans, basil, lemon, olive oil and your garlic (skin removed). Pulse well.

Spread over your flatbreads. Add extra seasoning with salt and pepper if needed.
