My basic original pancake recipe 


(makes 10-12 pancakes)

  • 2 cups plain flour 

  • 1/4 cup brown sugar

  • 1 tsp bicarbonate of soda 

  • 1 tsp baking powder 

  • 1 tbsp olive oil 

  • 1 tsp vanilla essence 

  • Pinch of salt 

  • 1.5 cups soya milk


  1. Get a large bowl and combine all of your batter ingredients. Whisk well. 

  2. Heat a large frying pan and add a little oil spray.

  3. Pour some of the batter in the centre of the frying pan. 

  4. Fry the pancakes one at a time. When you start to see air pockets form in the pancakes confidently flip them. Between pancakes I lightly spray the surface of the pan with oil and this stops them sticking! 

  5. Serve up the pancakes in a stack and add your desired toppings!
